HI April, 
The basket method only works in a hot and dry climate. Yep, if you leave them hanging too long, they become home decoration! The air and light just rob the constituents from the herbs. The bundles can be large if you are in a dry climate. The wetter the climate, the smaller the bundles need to be.

I have never used the food saver bag method. How do the herbs seem when you take them out?

I live in TN close to knoxville, I always use the hanging method to dry my herbs. In the past I have left them too long and they lost flavor. Also I would be interested to know how large my bunches should be... Can they be too large?? should I dry them in smaller bunches? I would like to try the basket method this summer. 

When I have a large amount I will put them in food saver bags and process the air all out and store them in the freezer till I am ready to use them.. Is this a good Idea??? do they retain their medicinal value when frozen in that way??

What about using your car on a warm/hot sunny day to dehydrate them as well?
