Glad to hear about thyme. Last year thyme took over my whole front yard herb garden. I was pulling out 5′ bushes and digging up baby plants that I took to our church food bank. I dried as much as I could and gave away a bunch more to church family. I have creepong, wolly, elfin, lemon, and the bigger bushier ones. I enjoyed your conversation so much! I agree with Rosalee’s thought at the end, “what if we have all these diseases because we have not eaten all these herbs each day?” (not verbatim). I believe we are phytonutrient deficient. Kami, I have your book, love it and use it often. I have ordered Rosalee’s book, and am excited to try new ways to fix herbs each day in our meals. Never heard an answer on how to keep the herbs we forage till we have enough to make something from?

We weren’t able to get to all the questions during our talk, we literally received more than 300 questions….
The answer to your question is plant specific. Some plants store better than others. It also depends on what you are going to do with the plant.
If you are going to dry it, then some dried plants have a 1 year shelf life, some have less.
Some herbs you can keep in the fridge for a few days, it really is a plant specific answer, so let me know which plant you are thinking of, Thanks!
