Arugula Pesto

Ingredients

  • 3/4 cup olive oil
  • 1/2 cup pumpkin seeds
  • 1/2 cup dried tomatoes
  • 3 garlic cloves
  • 1/4 cup fresh thyme
  • 2 tsp balsamic vinegar
  • 1/2 tsp salt
  • 2 cups arugula
  • 1/2 cup parsley

Instructions

  • Mix olive oil, pumpkin seeds, dried tomatoes, garlic, thyme, vinegar and salt in a food processor.
  • Once mixed well, add arugula and parsley until you have a nice even consistency.
