Mom’s Summer Salad

Ingredients

thinly sliced
of cucumber
2
sliced
of tomatoes
1/2
thinly sliced
of red onion
1/2
cup
of olive oil
1/4
cup
of red wine vinegar
1/2
cup
of chopped basil
3
tbsp
of minced parsley
1
tbsp
of fresh thyme or 1 tsp dried thyme
salt and pepper to taste
handful
fresh calendula petals
Instructions
Arrange the sliced vegetables
on a plate and drizzle the olive oil and red wine vinegar over them. Sprinkle
with the fresh herbs and salt and pepper and garnish with the fresh calendula petals.
