Whipped Goat Cheese with Fresh Lavender

Ingredients

For the Whipped Goat Cheese

  • 8 oz goat cheese, softened
  • 1/4 cup heavy cream (or coconut cream for a dairy-free alternative)
  • 2 tsp fresh lavender buds (or another edible flower or herb, like borage, nasturtium, or chives)
  • 1 tbsp honey
  • 1 tsp lemon zest
  • Salt and pepper, to taste

For Serving

  • Fresh herbs (such as thyme, oregano, rosemary)
  • Toasted crostinis (optional)
  • Fresh blackberries (optional)
  • Additional honey, for drizzling (optional)

Instructions

  • In a medium bowl, combine the softened goat cheese and heavy cream. Use a hand mixer or a stand mixer with the whisk attachment to whip the mixture until it is light and fluffy, about 2-3 minutes.
  • Gently fold in the fresh lavender flowers, honey, lemon zest, and a pinch of salt and pepper. Mix until well combined. Be cautious with the lavender, starting with 1 tsp and adding more if desired, to avoid bitterness.
  • Taste the whipped goat cheese and adjust the seasoning with more salt or honey as needed. 
  • Transfer the whipped goat cheese to a serving dish. Sprinkle with a pinch of fresh lavender flowers and/or fresh herbs (like thyme, oregano, or rosemary).
  • Serve the whipped goat cheese on toasted crostinis. Top each crostini with a fresh blackberry and a drizzle of honey, if desired.
  • Sprinkle your serving plate with lavender!
