In the herbal kitchen, springtime calls for lighter fare that suits our body’s needs for this time of year while celebrating the freshness of the season. It’s also a wonderful time for gatherings! Here are five of my favorite herbal recipes for a vibrant and healthy spring brunch menu.

The zesty, slightly spicy flavor of chives adds pizazz! This chive vinegar is the perfect dipping addition to a nice warm loaf of bread. Mix it with some olive oil and fresh garlic. It’s so simple and makes the perfect appetizer for a spring brunch menu. You could also use chive vinegar to make herbal salad dressing.

Not is this soup delicious, it’s loaded with the health benefits of nettle, which come into season once a year in the spring. If you don’t have nettles, you could substitute chard, kale or spinach.

Every year when the violets bloom, I find that tending my to-do list gets a bit more difficult! I would rather go daydream with the violets!
